Country Road chip ?

I live in northern Arkansas and there are no expressway/highways for 60 miles. All my driving in two lane back country roads. Mostly double-yellow curvy roads. What chip is best suited for quick passing at starting speeds of 30-40 miles an hour ? My Ty has a Kenne Bell cold intake system and a Flowmaster cat/ 3 inch exhaust. I have been driving my transmission in DRIVE not OVERDRIVE to get that extra kick. The Ty has about 110,000 miles and runs real strong.
So, what is the best chip ?

Honestly,

I'd leave it as it is. Really. If you have 110k on it and it still runs well, messing with the engine cal in an on-off-on throttle environment is a recipe for trouble.

Barring that, I'd have someone custom-tune something for your truck, and what you're doing with it. There's really nothing "off the shelf" that fits what you describe.

for the sake of learning something new, let's discuss what areas of the tune, chip wise, a person would focus on to increase the "passing" acceleration.

most of the time, we're shooting for WOT and 1/4 mile times but, i too have wonder what would you tune to make the truck more responsive during cruise conditions.

my initial thoughts are to increase the timing at the cells normally seen during cruise.
